Encocado de Camaron is a delicious dish from the coast of Ecuador and Colombia. I discovered this meal when I was travelling through Latin America a few years ago. After months of eating rice and beans, I decited to try something different when I was in Canoa, Ecuador and immediately fell in love with this dish. I basically ate it every day for the next two weeks and just couldn’t get enough. Once I returned back home to Switzerland, I really wanted to try making it myself but I had a hard time finding the ingredient achiote, which gives it the yellow colour. Therefore I decided to improvise and do it my own way – 3rd Culture Kid style!
INGREDIENTS:
1 onion
2 garlic cloves
vegetable oil
1 small tomato
2 bell pepper
1 teaspoon ground cumin
saffron
coconut milk
shrimp
fresh cilantro
plantain
salt and pepper
